In a review of studies conducted in humans(1), 52 studies investigating the inflammatory markers concerning dairy product consumption showed that dairy is anti-inflammatory in humans! This was shown positively in the entire data set from these pooled studies even when adjusted for their health status. This was shown even in low-fat, high-fat, and fermented products. In a nutshell, dairy is anti-inflammatory, not pro-inflammatory!
