This recipe is sugar-free and tastes really good. It doesn't take long to make and once you learn it, you can replace strawberry with other forms of berries too. You can have this as a snack, breakfast, a side with your dinner or as a standalone dessert. It is a great way to add some fat into your diet to fuel your body.

INGREDIENTS
- 1 cup 2% yogurt or high protein yogurt
- 1-2 oz. strawberries
- 1/2 cup erythritol or favorite low calorie sweetener
- 1/2 tsp vanilla extract
- 1/2 tsp monk fruit extract or stevia
- 1 tbsp lemon juice
- 1 pinch salt
- 1 cup heavy cream
- 2 large eggs, whites only
DIRECTIONS
- Grind together strawberries, sweetener, lemon juice, vanilla, monk fruit/stevia and yogurt
- Whip up egg whites in a small bowl until stiff
- Whip heavy cream and sweetener until stiff
- Add whipped cream mixture into yogurt mixture, 1/3 at a time and whisk
- Add egg mixture into the yogurt mixture, 1/3 at a time and whisk
- Refrigerate and serve
TIPS
Ensure that the yogurt you use is plain and doesn't have added sugar to it
You can buy a bag of frozen berries which will prolong its shelf life
Feel free to use any other berries you like
You can also use monk fruit extract as sweetener. Erythritol is our favorite.
