- 2 eggplants
- 6 roma tomatoes
- 2 yellow squash
- 2 zucchinis
SAUCE
- 2 tbsp olive oil
- 1 onion diced
- 4 cloves garlic, minced
- 1 bell pepper, diced
- salt & pepper to taste
- 28 oz. can of crushed tomatoes
- 2 tbsp chopped basil
SEASONING
- 2 tbsp chopped basil
- 1 tsp minced garlic
- 2 tbsp chopped parsley
- 2 tsp fresh thyme
- salt & pepper to taste
- 4 tbsp olive recipe
DIRECTIONS
- Preheat oven to 375F
- Slice the vegetables into 1mm rounds
- Make the sauce by heating olive oil medium-high in a large oven-safe skillet and saute onion, garlic and bell peppers until soft. Salt and pepper and add tomatoes. Stir till combined smooth and then add in basil.
- Add vegetables in alternative pattern on top of the sauce while seasoning with salt and pepper
- Mix all ingredients in seasoning and spoon over the vegetables
- Cover and bake for 40 minutes. Uncover and bake for 20 minutes.
- Serve with side dish
