INGREDIENTS

VEGETABLES

  • 2 eggplants
  • 6 roma tomatoes
  • 2 yellow squash
  • 2 zucchinis

SAUCE

  • 2 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • salt & pepper to taste
  • 28 oz. can of crushed tomatoes
  • 2 tbsp chopped basil

SEASONING

  • 2 tbsp chopped basil
  • 1 tsp minced garlic
  • 2 tbsp chopped parsley
  • 2 tsp fresh thyme
  • salt & pepper to taste
  • 4 tbsp olive recipe

DIRECTIONS

  1. Preheat oven to 375F
  2. Slice the vegetables into 1mm rounds
  3. Make the sauce by heating olive oil medium-high in a large oven-safe skillet and saute onion, garlic and bell peppers until soft. Salt and pepper and add tomatoes. Stir till combined smooth and then add in basil.
  4. Add vegetables in alternative pattern on top of the sauce while seasoning with salt and pepper
  5. Mix all ingredients in seasoning and spoon over the vegetables
  6. Cover and bake for 40 minutes. Uncover and bake for 20 minutes.
  7. Serve with side dish

Feel free to add your favorite vegetables alongside the ones in this recipe
