DRESSING
- 1 tbsp olive oil
- 1/4 cup lemon juice
- 1 tbsp water
- 1 tbsp vinegar
- 1 tbsp chopped parsley
- 1 tsp basil
- 1 tsp minced garlic
- 0.5 tsp oregano
- 0.5 tsp salt
- 0.5 lbs chicken breasts
SALAD
- 2 Cups lettuce leaves, washed & dried
- 0.5 cucumber diced
- 1 Roma totato diced
- 0.5 onion sliced
- 0.5 avocado sliced
- Sliced olives to garnish
DIRECTIONS
- Whisk together dressing ingredients in a large jug and refrigerate
- Use half the dressing as a marinade for the chicken for 30 minutes
- Mix the salad ingredients in a large bowl
- Grill the marinaded chicken on a pan or grill over medium-high heat until it is brown
- Let the chicken cool down for 5 minutes, slice and serve over salad along with the remainder of the dressing
