INGREDIENTS
- 1.5 cup almond flour
- 2 cups erythritol
- 6 tbsp butter
- 4 eggs
- 1/3 cup heavy cream
- 1 tsp vanilla
- 1 tsp lemon juice
- 1 tbsp lemon zest
DIRECTIONS
- Pre-heat oven to 325F
- In a microwave-safe bowl, melt butter in microwave and mix almond flour and 1/2 cup erythritol
- Line a baking springform pan with the dough and bake for 10 minutes
- In a bowl, combine all the remaining ingredients and blend until smooth and creamy
- Pour on top of the crust in the baking pan and bake for 1.5 hours at 325F
- Remove, cover and slowly let it cool down for an hour
- Refrigerate and serve
